It'll be Dr. Dawg instead of Hooters at vacated Greenfield restaurant

Greenfield - A family-owned restaurant specializing in custom-made gourmet sandwiches in the genre of Chicago-style hot dogs and Italian beef is proposed for the former Hooters location.

David Ross said he hopes to open his Dr. Dawg restaurant in time for Christmas. The eatery at 7700 W. Layton Ave. would be his family's second, and flagship, restaurant in the area. His first is in Glendale.

The Dr. Dawg concept was developed in spring 2009, Ross said in his written request to the city.

Dr. Dawg's selections would include several "healthful" options, including food that is gluten-free and trans fat-free and has all-natural items, he said.

Ross proposes a large open dining area with tables, booths, counter seating, an outdoor patio and a drive-through. He said he hopes to be able to serve beer and wine.

The main point of discussion at the Greenfield Plan Commission last week was the proposed exterior color scheme.

Hooters' scheme was orange and gray. Ross proposed bright red where the orange is and white where the gray is.

But the Plan Commission called for toning that down a bit. As it emerged from the commission meeting, the red will be a darker brick-like red and the white softened to a light gray.

"Technically, we look for earth tones," said Chuck Erickson, director of planning and economic development.

The Common Council was expected to approve the colors along with the building and landscaping plans Tuesday night. If so, Ross will be able to start work immediately.

He will have to come back to the Plan Commission with a sign proposal and a public hearing will have to be held before an outdoor patio can be approved, Erickson said.

Hooters closed July 22 after 15 years in business locally.
